Food would be boring without spices. They give aroma, color, flavor, and sometimes even texture to food. Each spice, chili, or herb has specific, unique chemical compounds that create the sensual qualities for which we value them. But in this podcast we focus on very hot spices and chilies.

You’ll hear about the Scoville scale, which indicates the concentration of capsaicin in each spice and chili. The higher the number, the spicier the sauce. Which peppers do you think are the hottest and could you possibly eat them? And would you cool down with a glass of water or a glass of milk?

Spices and chilies also have health properties which protect the heart.
